(KZN.RU, August 5, Alena Miroshnichenko). This year, a record number modernized school canteens are launched – 38. The organization of school meals is the most important strategic issue. It will always remain under special control, as it is related to the health of children and their future. Ilsur Metshin, the Mayor of Kazan, voiced this opinion today at the Business Monday in the city Executive Committee.
More information about the modernization of school canteens was told by Rima Mukhamedshina, the general director of the Department of Food and Social Catering of Kazan.
By September 1, the overhaul will be completed in 36 schools. They replace the electricity, water, and sewage networks, ventilation systems of catering units, as well as carry out finishing work. Repair of 33 schools is funded from the budget of Kazan in the amount of 170 million rubles, and three schools under the project “School Restaurant” at the expense of the Department of Food in the amount of 19.4 million rubles. “All this will improve the sanitary condition of the canteens. And the area of dining halls is increasing for increasing the number of seats. Furniture worth 14.8 million rubles was purchased at these schools at the expense of the Department”, reported R. Mukhamedshina. Design projects of school canteens have been developed, now they are being implemented for two more new schools in the residential complex “Vesna” and on Gareeva Street.
“Since 2012, 27 school-style dining rooms have appeared over the 7 years since the start of the project. This year, a record number is launched – 38 modernized school canteens. There will be 65 school canteens renovated in the format of the School Restaurant, taking into account the repair and opening of new schools in Kazan. All these measures will increase the number of seats in total by 1544. Another 930 places will appear in new schools”, said the speaker.
In addition, a two-year program was developed with an investment volume of 100 million rubles to close the need for updating and additional equipment for production and, noted R. Mukhamedshina. Within the framework of this program, about 1300 units of modern equipment will be purchased in food processing units, 400 units will appear in schools by September 1. “This will increase the capacity of the distribution line, maintain the temperature when serving meals, comply with sanitary standards, ensure safety and improve the quality of food for children and the working conditions of employees”, said the speaker.
By September 1, the total budget of investments in the modernization of school catering will be 250 million rubles, including 170 million rubles from the city and 80 million from the Department of Food, said R. Mukhamedshina.
The Department pays special attention to the quality of the products, which are delivered to social institutions, because 98% of its recipients are children, continued Rima Mukhamedshina.
“All products imported to the department’s warehouses undergo quality and safety control through an accredited technology laboratory. Last year, 664 tons of products that could fall into school plates were rejected thanks to daily monitoring. For the first half of 2019, there were 456 tons”, she reported.
To strengthen quality control, the Department constantly updates laboratory equipment. Thus, the purchase of FoodScan Foss analyzers allowed reducing the time for conducting physical and chemical studies on products from two days to 30 minutes. The purchase of the Mini-vidas analyzer made it possible to carry out an express analysis of microbiological parameters to determine Listeria, Salmonella and other pathogenic organisms within one day instead of five days. “This allows us to conduct analyzes at a new qualitative level, shorten the analysis time, increase the turnover of animal origin products by reducing the time spent in laboratory quarantine”, noted R. Mukhamedshina.
In addition, it was possible to increase the storage capacity of goods and increase the capacity of refrigerators by 70 tons through the installation of three additional cooling chambers with a total area of 200 square meters.
